This wine is produced only in favourable years , from Verdicchio selected overripe grapes left to whiter in vineyards and harvested at the beginning of November.

TECHNIQUES

In order to favour the overripe on the plant , at the beginning of October , the stem of clusters is twisted. This way the vital lymph’s flux for clusters is arrested and they slowly dry. The grapes will then be harvested at the beginning of November, with the selection on the spot of the noble rot suitable to our Passito style.

MATURING
In Rovere Allier barriques of different passage for at least 12 months and further ripe in bottle in controlled temperature environment.

COLOUR
Golden colour with coppery highlights

SCENT
Sun-dried apricot, yellow plum , barley candy, date.

TASTE

Sweet, full, a generous softness on the wings of a sapidity reminding acacia honey and sun-dried white figs , to end with a pleasant acid note characterizing its drinkability.

PAIRING
Best end-of-meal wine, particularly with desserts, cheese, biscuits, almond biscuits in particular
