Whole clusters’ soft pressing, fermentation at low temperature in autoclave for 6 months for secondary fermentation with selected yeast.

Delicate, a fruity note evoking white peach together with ripe pear and apple .
TASTE
Dry, sapid with a minerality granting great pleasure.
PAIRING
Particularly good as appetizer or with dishes of the Mediterranean diet . Ideal with fish .
