ROSSO PICENO D.O.C.
This wine was born from a careful selection of Sangiovese, Montepulciano and Cabernet Sauvignon grapes of our Castelbellino vineyards, anciently called Morro Panicale.

TECHNIQUES
Grapes harvested singularly at optimum ripeness with adequate aromatic and tannic richness. Fermentation with selected yeast , maceration on skins at low temperature for a starting period of 48 hours to go on for approximately 15 days before racking.
MATURING
12 months’ aging in Rovere Allier barrique of different toasting; assemblage, after careful tasting , precedes bottling and then follows a careful aging for 12 months and more.
COLOUR
Intense ruby-red with pomegranate reflections.
SCENT
Lively red fruits, with sour cherry, morello cherry and plum mixed with spicy notes of clove and black pepper.
TASTE
Bodied wine, full , with complex, austere tannins, very sweet and persistent
PAIRING
Superlative wine with roasts of red and white meat, at its best with venison
SERVING TEMPERATURE
16°-18°C. uncorking the bottle 1 hour before serving
